Diese Norm legt ein enzymatisches Verfahren zur Bestimmung des Gehaltes an Ethanol in Honig fest. Ethanol wird durch Nicotinamid-adenin-dinucleotid in Gegenwart des Enzyms Alkohol-Dehydrogenase zu Acetaldehyd oxidiert. Acetaldehyd wird in Gegenwart von Aldehyd-Dehydrogenase quantitativ zu Essigsäure oxidiert. Das gebildete NADH ist der Ethanolmenge äquivalent und wird spektralphotometrisch bestimmt.
