Assessment of biosecurity in Farm to Fork chain
This document establishes a rational basis and gives general guidelines for standardized procedures for assessing the level of biosecurity within various elements of the Farm to Fork chain. This document defines the biosecurity and risk assessment principles and outlines sampling protocols and details the methodology for measuring various parameters, including microorganisms. To make evaluations possible, procedures for assessment of biosecurity in farm to fork (F2F) establishments have to be elaborated. The procedures shall be based on a risk analysis approach. Risk in F2F settings have specific meaning: this is a combination of the severity of the various biological agents through the transport channels, and the probability assigned to these agents to be transported through the channels.
